Snappy Bacon and Eggs Salad
Who hasn't had bacon and eggs in their lifetime. It's an American staple. This recipe is not eggsactly
healthy
but this bacon and eggs salad is delicious. Makes about 4 servings.Ingredients needed: 6 hard cooked eggs. 3 oz. or 3 slices thick cut bacon, cut into 1/4 in. diced. Salt and fresh ground pepper. 1/2 cup mayonnaise. 1 tspn. ketchup. Quarter the eggs, course chop them and place in bowl. In a skillet, cook the bacon over medium heat approximately 4-5 minutes until crisp. Transfer bacon to paper towel to drain. Add the bacon to the eggs and toss. Mix the mayonnaise and ketchup in a separate bowl and stir into the bacon and eggs. Enjoy.
