Beef recipes are fun to prepare and experiment with. Every one has different taste when it comes to beef. From rare to well done, it's an endless argument in my family. From utility grade used in dog food to select, choice and prime being the best and most expensive. If you've ever eaten at a Morton's steak house or a Ruth's Chris steak house, you've eaten prime grade beef. It is available to the public but only 1% of all beef out there is prime, hence the cost. Beware of something called a six pack company. They try to sell you a whole case of meat and give you a good price. Of course the meat has to have a solution added to it which contains enzymes to tenderize the meat. This is relatively easy to spot because by law it must read on the package 10% solution or whatever the percentage is. Some of the supermarkets in the past few years have been carrying a lower quality product with solution added to it. I personally would recommend only choice or prime cuts of beef with 0 solution added to it. There are also some mail order companies out there, and I won't mention names, but one is in Nebraska. There is the same concern with anywhere you buy your beef. Watch out for the solution. Let's talk about packaging for a minute. The best way possible to buy your beef is cryovac sealed and flash frozen. Which means it is as fresh as the day it was slaughtered. This is the wave of the future but many people still argue that fresh is still the best. Remember, when you see it in the grocery store and it's supposedly fresh, how long has it been sitting in the showcase exposed to the air? By the time it goes on managers special, it's past the date of when you should be eating it. It's on special for a reason and that reason is to get rid of it. Another tip is to look in the grocery store at the label in the show case. You may see the words "previously frozen". This must be advertised by law but many people overlook this detail and may think they're buying fresh. This might have been a good selling point before the invention of the freezer or refrigeration, but this is the 21st century. You don't have to crank start your car any more. Finally, let's get the facts straight about grain fed vs. grass fed. Yes it's true that grass fed is
healthier
for you, and that the grain may have been sprayed with pesticide when it was growing in the field. However, your favorite steakhouse has a long wait to get in on Friday and Saturday night because grain fed tastes better, so that's what you're eating when you go out to most steak houses.
