Here's a handy cheese dip recipe for those nachos. You will notice through your reading of this site that nachos are one of my favorite things to eat. In fact, I've been known to cook up almost anything with a side of nachos. After all, corn is a major part of our society and there are foods in almost every culture that have corn in them. I'm not going to bore you with a history lesson so let's get on with the recipe. Serves 6-8.Items needed: 1 roll of your favorite sausage. 1 lb. Velveeta 10 oz. can of diced tomatoes and green chilies. Brown sausage in a skillet and drain. Melt cheese in a double boiler or microwave oven. Combine tomatoes and chilies with cheese and sausage. Serve hot with your favorite large white, yellow or multicolored tortilla chips. Enjoy.
