Paprika Chicken Breast Strips

Items Needed:

bonless, skinless chicken breast

A medium pan

V8 juice

paprika

flour

olive oil

green onions

garlic

sour cream

In a bowl, combine

1 1/2 cups of V8 juice.

a tablespoon of paprika.

a tablespoon of flour.

Set this mixture aside.

In a medium pan with olive oil, over medium, high heat

add 1/2 cup of sliced green onions.

2 cloves of minced garlic.

Cut skinless, boneless chicken breast cutlets into strips.

Cook until chicken is no longer pink

Add mixture from bowl and bring to a boil, stirring often.reduce heat to simmer for 15 minutes. covered.

Remove from heat, stir in some sour cream.

This can also be served over noodles and garnished with parsley.

Chicken Cordon Blue, Open face

Items Needed:

boneless, skinless chicken breast , quantity depends on how many serving.

1 deep skillet with a lid

salt and pepper

olive oil

butter

swiss cheese, sliced or shredded

ham, sliced or diced.

Horizontally slice chicken breast about 1/3 inch thick.

Place about a 1/2 teaspoon of salt, 1/2 teaspoon of pepper and 1/2 cup of breadcrumbs into a ziploc bag and shake to combine.

Heat 2 teaspoons of butter and some olive oil in a deep skillet that has a lid.

When butter has melted, place chicken into zip loc bag and shake to coat.

Place immediately into skillet and repeat until all sliced chicken is in skillet.

Raise heat to medium high and cook for 3-4 minutes per side until golden brown.

Turn the chicken over to the first side and place some ham and swiss cheese on each piece of chicken.

Place lid on skillet and cook for approximately 1 minute until cheese is melted.
