Snappy Chicken Divan

This chicken divan recipe serves 4 people.

Items needed:

4 skinless, boneless chicken breast halves.

1 tspn vegetable oil.

1 large onion.

Pinch of black pepper.

1 can 10oz. cream of chicken soup.

1 14oz. can chicken broth.

1 1/2 cups instant rice.

1 16oz. bag frozen broccoli cuts.

1/2 cup finely shredded sharp cheddar cheese.

Place chicken in microwave on high for 2 min. uncovered to defrost, or buy cryovac sealed chicken breast which thaw out in hot water in 5 min.

While chicken defrosts, heat oil, on medium heat in an extra deep 12 in. skillet with lid.

Peel and coarsely chop onion and add to skillet as chopped.

Cut chicken into bite size pieces and add to pan.

Sprinkle with black pepper.

Raise heat to medium-high and cook, stirring often until chicken is no longer pink. about 3 min.

While chicken cooks, open soup cans and measure out the rice.

Add soup, broth and rice to skillet.

Stir until thoroughly blended.

Sprinkle broccoli over the mixture.

Cover, reduce heat to medium and cook for 5-7 min.

Sprinkle cheese evenly over the skillet and cook uncovered until cheese melts. 1-2 min. Enjoy.
