It's a little bit colder here in the North East this week but we fired up the grill anyway,  even on super bowl Sunday in our ski jackets if necessary. Let's face it, theres no substitute for grilled classics like burgers and hot dogs. My wife makes a wonderful burger recipe that I'll be adding very soon. As you can see from the photo, we grilled burgers, hot dogs, chicken breasts and breaded haddock. Believe it or not, haddock tastes pretty good when grilled and took about 8 min. per side from thawed on low-med heat. . as well as the haddock and the ground beef my wife made the burgers out of. Talk about gristle free meat, that ground beef is fantastic. The burgers took about 6 min. per side. on med-high heat for med-well doneness. Enjoy.</description>

Today we decided to grill the Parmesan ahi tuna, some fillet mignon and a steak called a culotte. I'll explain that one since I meet a lot of people who aren't familiar with it. The first thing I did was place the cryovac, flash frozen food in the sink in hot water. I had a beer while I heated up the grill, cleaning and oiling the grates. In 5 minutes the food was thawed and the grill was ready. I took the steaks and placed them on the grill and took some grated Parmesan cheese and sprinkled it all over both sides of the ahi tuna, then placed it on the grill over medium heat so the flame doesn't touch the fish. The steaks were on medium-high heat. In 3 1/2 minutes I flipped the fish and left the steaks alone. After 3 1/2 more minutes I removed the tuna and flipped the steaks. I sprinkled some parsley flakes on the tuna for the photo. My wife cooked up some pierogies with some butter in a pan and made us salads. The tuna was delicious as well as the steaks. 

If you're not familiar with culotte, it is a cap steak from the top butt end of the cow. What makes it so good is that it is similar to a NY strip, but leaner, so every bite is wonderful with no fat. The cost is cheaper than the NY strip because of the demand for NY strips. I prefer and recommend the culotte. If restaurants start serving culotte, remember where you heard of it first. . I placed them in the sink in hot water for about 5 minutes which allowed me to preheat the grill to 400 degrees, remembering to use my brass bristled brush so I don't ruin my porcelain grates. I also used one of the grill wipes I mentioned before to oil up the grates.

I rubbed the ahi tuna with some olive oil and sprinkled a little bit of Lowry's seasoned salt on for some flavor and on the grill it went along with the fillet mignon. I placed the steaks on the right side of the grill over medium-high heat and the tuna on the left side over low-medium heat so the flame wouldn't burn the fish. 

The steaks took about 7 minutes per side for medium well and the ahi tuna took about 3 1/2 minutes per side with plenty of pink left in the middle. I poked it in the center to check it. My wife likes her steak well done so I left it on a bit longer while I cooked the chicken fingers which took about 10 minutes per side on medium-high heat. We had some hot dogs also.

I had my ahi tuna crumbled up over a bed of romaine lettuce with some black olives, Italian dressing and some shredded cheese. The fillets were fantastic as always. We had potatoes and green beans as a side. The rest of the food we grilled, chicken fingers and hot dogs, will be reheated through the next few days so we don't have to cook every night. 

I know some of you may not be a fan of leftovers and want to cook every night, but life is fast paced sometimes and the leftovers from the grill beat the pants off fast food or delivered whatever. I ment to take photos but we were hungry, but I still have some ahi tuna and fillet mignon in the freezer so I'll get a photo for you soon.</description>
