Hawaiian Salad Recipe.
Get a drink ready with an umbrella in it.

I don't know how authentic this Hawaiian salad recipe is so please go easy on me. I'm from the main land.

Items needed:

20 oz. can pineapple chunks, drained. Can use Maui Gold pineapple and cut it yourself or buy the authentic Maui pineapple Co. brand in a can found in your grocery store.

15 oz. can black beans, rinsed and drained.

1 1/2 cups white or brown rice.

1/2 cup shrimp, cooked, pealed and deveined. size 20-24 are fine but I like the larger size 16-20.

1 medium red or green bell pepper, chopped.

1/2 cup chopped celery

1/2 cup chopped green onion.

1/2 cup light honey Dijon dressing.

Combine all ingredients in a large bowl, pour dressing and toss.

Note: can substitute chicken for shrimp in case you're like my wife wife and don't enjoy seafood.
