Your steak recipe will only be as good as the meat you started with. You can't cover up a tough steak with a bunch of marinade so start with a good quality piece of beef. Choice grade isn't that expensive if you have a budget. Hey, I have a budget too. A good grilling tip is to rub your steaks with olive oil before placing them on the grill to prevent sticking. If you don't use olive oil and they do stick, just leave them on a bit longer and they will release. If you try to pry them loose you'll loose some to the grates. Now let's get started on the recipes.
Fillets with Orange Glaze
Items Needed:
Fillet Mignon Steaks
diced onions olive oil minced garlic 2 1/2 cups orange juice 1/2 cup unsulphered molasses 1/2 cup dark rum salt and pepper Fillet Mignon Steaks Prepare the glaze ahead of time. In a sauce pan with some olive oil over low-medium heat, cook the onion for approximately 5 minutes until soft. Add the garlic and cook a few more minutes. Add the molasses, orange juice and rum. Add some salt and pepper and bring to a boil. Reduce heat to a simmer for approximately 15 minutes to reduce mixture to 1 1/2 cups. Rub fillets with olive oil and grill for 5-7 minutes per side on medium high heat. Brush glaze on top and sides after turning meat to second side. Remember what I said earlier about everyone having different taste. Have fun with this. Try more glaze on both sides. Also note that 5 min. per side is medium doneness. Cook longer if you like it well done.
Steak House Grilled NY Strips
Items needed:
NY Strip Steaks
1/2 cup A-1 Sweet and Tangy sauce some minced onion 1 clove minced garlic and some tabasco pepper sauce to taste. 2 inch thick NY Strip Steaks work great. Mix above ingredients in a bowl. Grill steaks approximately 5-7 min. per side. Brush with sauce on each side as cooking. Enjoy. Check steaks for desired doneness, grill a bit longer if necessary. Porterhouse steaks also work well with this recipe.
