Get ready for some tasty vegetable recipes. I have to admit, I'm still learning when it comes to vegetables. I started my own garden about 3 years ago with green beans, tomatoes and cucumbers. I was amazed at how simple it really is. I mean I'm not looking to win any awards for the best garden, I just wanted some nice vegetables to eat. Vegetables are best nutritionally when steamed because they keep a lot of their vitamins. You can even grill them. As usual, come back often to check on the new recipes. Green Beans with Water Chestnuts
Items needed:1 lb. fresh green beans, 1 5oz. can sliced water chestnuts, 1/2 cup chicken broth, 1/2 tspn ground ginger, 1 finely chopped clove garlic, 1 tspn. soy sauce and fresh ground pepper. Cut beans ahead of time. Combine the chicken broth, ginger and garlic in a frying pan and bring to a boil. Add the beans and water chestnuts. Drizzle on the soy sauce. Cover and steam for approximately 7-8 min. until crisp but tender. Remove cover and cook off the rest of the liquid if necessary. Add ground pepper to taste and enjoy.
Snappy lemon, honey glazed carrots
Items needed:1lb. carrots, 1 strip lemon zest(use vegetable peeler), 1 tblspn. honey, pinch of course kosher or sea salt, lemon juice, fresh ground pepper. optional: pinch of dried cumin. Remove stalks from carrots, peel and cut into 3/4 in. lengths. In a saute pan, combine the carrots, lemon zest, honey, cumin, and salt. Add water to almost cover the carrots and bring to a boil. Cook uncovered at a medium boil stirring occasionally until the liquid has mostly evaporated. Approximately 14 minutes. Lower the heat and stir gently for a few more minutes until the liquid reduces into a syrup like glaze. Stir in the lemon juice and pepper to taste and enjoy. Note: a wooden spoon or whisk work well for stirring the glaze. This recipe can be refrigerated but may dry out. Add a little bit of water to restore moisture content.

I don't know who thought up this green beans recipe but it is quick and delicious.Items needed: 16 oz. package frozen french style green beans. 4-6 slices bacon. 1 medium onion, chopped. 1-2 cloves garlic, fine chopped. 1 Tblspn. butter. salt and pepper. Cook green beans according to package instructions. Fry bacon in skillet until crisp and set on paper towl to drain. Drain skillet reserving about a Tblspn. of bacon drippings. Add butter, onion and garlic to skillet. cook over medium heat until onions turn golden. Drain beans and add to skillet. Cook, stirring until beans are mixed in and hot. Mix in crumbled bacon. Salt and pepper to taste and serve.
